YUMMY GINGER CREAMS

This recipe is requested by my sister Anna. They are Bill's favorite cookie I make at Christmas time. They are his family recipe. They are a soft cake like cookie full of wonderful spices that make them pop with flavor. Top that with a creamy butter cream frosting with a hint of orange and you have a lovely taste combination that will have you saying mmmmmmmm!
INGREDIENTS:
2/3 cup shortening 1 tsp salt
1 cup sugar 1 tsp baking soda
1 cup water 1 tsp nutmeg
1 cup molasses 1 tsp cloves
2 eggs 1 tsp cinnamon
4 cups flour 2 tsp ginger
INSTRUCTIONS:
In large bowl thoroughly mix together shortening, sugar, molasses, eggs, and water. In another bowl mix together dry ingredients. Slowly add dry ingredients to wet, mixing thoroughly. Cover bowl and chill in refrigerator for one hour. Preheat oven to 400. Drop dough onto ungreased cookie sheet. Bake for 8 minutes or until springs back from touch. Let completely cool on cooling racks. Frost with Orange butter cream frosting.
ORANGE BUTTER CREAM FROSTING
INGREDIENTS:
1 stick softened butter
2 to 3 cups confectioners sugar
1 to 2 Tbsp orange juice
INSTRUCTIONS:
In large bowl cream butter, add sugar and juice until desired consistency. Frost cooled ginger cookies.
These are absolutely delicious, like eating just the top of a cup cake. I always add a little extra on all the spices. I also add a lot more orange juice to get the consistency I like. But add it gradually. If it gets to orange I start adding half n half. Like every thing find your own little touch to make it your own.
