Not Your Regular Burritos


Fun to create your own 
This recipe is at the request of my nephew, James, who loved when I use to make them for dinner. Hope your family loves them as much!


 Ingredients:

Taco size flour tortillas 
1 to 2 lbs ground chuck (1 lb makes 4 very full burritos)
1 or 2 medium size potatoes (diced)
1 1/2 tsp onion powder
1/2 tsp garlic powder
salt and pepper to taste

Toppings:

Shredded cheddar cheese (I prefer extra sharp)
Sour cream
Taco sauce or salsa
Olives (sliced) (green or black or both) 
Onions (chopped) (green or regular)
Tomatoes (diced)
Lettuce (shredded)
Jalapenos (sliced)
And anything else that sounds yummy to you!

Directions:

First boil your diced potatoes till fork tender..drain. Add seasonings to ground meat and brown..drain. 

Place potatoes in skillet with beef

Push meat to one side of skillet and place potatoes next to it. Add additional salt pepper and onion powder to potatoes.

Mix meat and potatoes 
After meat and potatoes are mixed place up to 4 flours on top of meat. Make sure to have temperature on lowest setting so meat mixture doesn't burn. Cover with lid and let flours steam till hot and soft. Remove flours and place some of the meat mixture in center of flour tortilla.

Top with your favorite toppings
Place all of your toppings in bowls in center of table and let everyone create their own. After toppings are on, fold bottom of flour up then each side, secure with toothpicks. For color and fun use the fancy colored toothpicks, also makes them easier to see so little ones don't bite down on one. 

This is a quick easy fun dish for the whole family

 I always keep ground chuck in one pound packages in my freezer. I just go to one of the wholesale stores and purchase in bulk, then separate into one pound packages. There are so many quick meals to make with it. Also meals that can be used for more than one night, like spaghetti or chili. You should always keep your cupboards stocked with basic staples so you can always create something yummy to eat when the mood strikes. If you could see my pantry you would gasp there is so much in there..but I never have to run to the store if I am in the mood to cook something creative. An artist doesn't wait till she's ready to paint to go out and buy her supplies..so why should you as a creative cook. Just make sure to check dates and rotate. I always dig to the back of the shelf to find the latest date on grocery shelves. As always make it fun and creative.
