An awesome recipe for leftover poultry |
This is a pretty fast recipe for making a pot pie. You use ready made crusts and leftover chicken or turkey. Easy peasy, nice and easy!! What can be better for a home cooked meal? And best of all it is one of the yummiest pot pies you will ever eat. Warning: it is hard to stop eating this dish once you taste it. You keep telling yourself just one more little bite!
INGREDIENTS:
1 box refrigerated pie crusts, softened as directed on box
2/3 cup butter
2/3 cup flour
1 1/2 tsp onion powder ( may use 1/3 cup chopped onion if you like onions)
1 tsp salt (I use a bit more seemed bland first time I made it)
1/2 tsp pepper
1 32 oz box chicken broth
1 cup milk
2 1/2 cups chopped chicken or turkey
2 cups frozen mixed vegetables, thawed
1 medium potato diced and boiled till barely tender
INSTRUCTIONS:
1. Heat oven to 425. Make pie crusts as directed on box for two-crust pie using 9-inch glass pie pan.
2. In 2-quart saucepan, melt butter over medium heat. Add onion, if using, cook for 2 minutes, stirring frequently, until tender. Stir in flour, salt, pepper and onion powder until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
3. Stir in chicken, potato and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pie pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust.
4. Bake 30 to 40 minutes or until crust is golden brown. Put pie crust circle around to protect crust edges from over browning. If you don't have the rings cover edges with tin foil and remove last 10 minutes of cooking to let brown. Let stand 5 minutes before serving.
I have doubled the recipe for the sauce because first time I made it was way to dry. It is a little to much sauce so may not all fit into pie crust. I just save it and warm it up and use next day when reheated, pie is drier.
This is so very yummy tasting you will fall in love with it like I have. A great way to use that left over turkey and not feel like you are eating turkey. Also good way to use left over rotisserie chicken. As always add your own touch or twist...make it your own. Spice it up add some jalapenos and a little chili powder. Add green, red and yellow bell peppers. Change it up every time till you find the combination you and your family like best. I took out the onions and added potatoes, doubled the sauce. If the sauce is to much just use half the amounts of all but the poultry and vegetables. But whatever you decide to do just remember to add my secret ingredient, love.
