Lemon Pepper Tilapia

Tilapia with a simple lemon butter sauce
This is a simple hearty meal. It takes a plain fish and gives it a little zip and zing. The butter adds a richness and the lemon a touch of citrus flavoring. I just made a box mix rice pilaf and corn with butter salt and pepper. You can add your favorite side dishes, this recipe focuses on the fish. A very yummy flavor combination with the seasoned fish then the added sauce. Hope you enjoy the burst of flavors!


INGREDIENTS:

4 Tilapia fillets (more or less depending on servings needed)
1 lemon or lemon juice
1 stick of butter
onion powder
garlic powder
salt & pepper
lemon pepper rub


DIRECTIONS:

In electric skillet melt half the stick of butter add about 1 tablespoon lemon juice with fresh squeezed or from lemon juice. While butter is melting generously sprinkle all the spices on both sides of fish. Place in heated skillet. Cook till fish flakes easily with a fork. Should be white not clear on the inside and flake with touch of fork. Chop up rest of butter place in small microwave safe dish add about a tablespoon of lemon juice. Melt in microwave for about 15 seconds. Mix till all of butter is melted. I place the fish on top of the rice and spoon lemon butter over fish and it falls through to rice to add a nice blending of flavors.
