Awesome Banana Muffin Recipe


These are absolutely delicious banana muffins


I found this recipe on line at Cat Can Cook. They are so easy the kids can help. And sooooo yummy you will want to make them over and over again. I make them three different ways when I make a batch. With walnuts - with chocolate chips or baking m&m's, (makes pretty colors for the kids), and with chocolate and walnuts. They are all just as yummy. This is what I do with my bananas when they get ripe. Like all recipes get creative and add what you like. Life is fun when you make it fun, and can be fun no matter what you are doing! 3 or 4 Large bananas, mashed (the more the moister, so I use 4)
 1/2 cup to 1 cup sugar (depends how sweet you like them)
1 egg, slightly beaten egg
1/3 cup butter, melted
1 tsp baking soda
1tsp baking powder
1/2 tsp salt
1 1/2 cups flour
optional 1/2 chopped nuts - chocolate chips


Mix the mashed banana, sugar, egg and butter together. Set aside. In small bowl mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir! Makes them tough. Pour into greased muffin tins or lined tins, and bake in preheated 350 degree oven for approximately 20 minutes. Yummy
